Torn basil goes in off the heat at the end and wilts fragrant into everything. Ground chicken browns in craggy pieces with onion and garlic until the bottom of the skillet turns golden, green beans stay snappy, and zucchini softens just short of falling apart. Diced avocado and lemon juice land cold on top.

Why You'll Love This Recipe

Fresh and filling on a weeknight, with no long ingredient list and no sink full of dishes. It leans on ground chicken and a generous amount of green vegetables, so it eats light but still keeps you full. If you cook for a household that wants real food on the table in under half an hour, this is the kind of dish you come back to on a busy Tuesday.

Cook in order, then finish fast. Browning the chicken with the onion and garlic first builds a savory base, and adding the green beans before the zucchini means each vegetable is cooked to its own best texture rather than all going soft together. The real turn comes off the heat: fresh basil, a squeeze of lemon, and diced avocado stirred in at the end keep the whole skillet bright, herbal, and a little creamy instead of flat and heavy.

Protein, vegetables, and good fat, all in one bowl. The ground chicken gives it staying power, the green beans and zucchini add volume and fiber so a serving feels substantial, and the avocado and olive oil round it out with a richness that makes it taste like more than the sum of its parts. It is the sort of meal that leaves you comfortable rather than weighed down.

Ingredients

Serves4Amounts change with the number. The nutrition panel is per serving, so it stays the same.
  • 1 1/2 lb ground chicken
  • 2 zucchini, halved and sliced
  • 3 cups trimmed green beans
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 3 1/2 tbsp olive oil
  • 1 small avocado, diced
  • 1/3 cup torn fresh basil
  • 1 tbsp lemon juice
  • 3/4 tsp salt

Instructions

  1. Prep the vegetables: Trim the ends from the green beans. Halve the zucchini lengthwise and slice into half-moons. Peel and dice the onion, and mince the garlic. Tear the basil into small pieces and squeeze the lemon for its juice. Set everything within reach; leave the avocado whole for now so it stays fresh.
  2. Brown the chicken: Heat a portion of the olive oil in a large skillet over medium-high heat. Add the ground chicken along with the onion and garlic. Cook 6 to 7 minutes, breaking the meat into small crumbles with a wooden spoon, until the chicken is no longer pink and lightly browned in spots and reaches 165°F (74°C).
  3. Add the green beans: Add the green beans and a splash of water to the skillet. Cover and cook about 4 minutes, until the beans turn bright green and are crisp-tender, cooked through but with a little snap when you bite one.
  4. Add the zucchini: Stir in the zucchini along with the remaining olive oil. Cook uncovered about 4 minutes, stirring now and then, until the zucchini is just tender and still holds its shape. Keep the heat lively so the zucchini browns lightly rather than steaming into mush.
  5. Finish and serve: Remove the skillet from the heat. Stir in the torn basil, lemon juice, and salt. Dice the avocado now and fold it in gently at the very end so it warms through without breaking apart. Taste, adjust the salt, and serve right away.

Variations

  • Yellow squash: Swap the zucchini for yellow summer squash, sliced the same way. It cooks in the same time and gives the skillet a slightly sweeter, sunnier look.
  • Asparagus instead of green beans: Trade the green beans for asparagus cut into short lengths. Add it in the same step, but check it a minute early since asparagus turns crisp-tender faster.
  • Ground turkey: Use ground turkey in place of the ground chicken. It browns and seasons the same way; choose a version with some dark meat so it stays juicy.
  • Extra greens: Fold a big handful of baby spinach or arugula into the skillet in the last minute, stirring just until it wilts, for more green in every bite.
  • Herb swap: Use fresh mint or dill in place of some of the basil for a different herbal note. Stir it in off the heat the same way to keep the flavor fresh.

Storage & Leftovers

Store leftovers in an airtight container in the refrigerator for up to three days. The chicken and green vegetables keep well; the avocado is best eaten the day it is made, since it softens and darkens over time.

To reheat, warm a portion in a skillet over medium heat with a small drizzle of olive oil, stirring until heated through. This keeps the vegetables from turning watery the way a microwave can. If you do use the microwave, heat in short bursts and stir between them.

To get ahead, cook the chicken, green beans, and zucchini through and refrigerate, then reheat and add fresh basil, lemon, and freshly diced avocado just before serving. Holding those three finishing ingredients back keeps the reheated dish tasting bright rather than tired.

Notes & Tips

A few notes from my kitchen to help this skillet come together smoothly.
  • Pick the right chicken: Ground chicken made with some thigh meat stays noticeably juicier than all-breast, which can dry out. If your package looks very pale and finely ground, be gentle with the cook time so it does not turn crumbly.
  • Time the avocado: Fold the avocado in at the very end, off the heat, and dice it only when you are ready to serve. The lemon juice in the dish helps slow its browning, but it is still best fresh.
  • Keep the heat up: Zucchini holds a lot of water. Cooking it over lively heat in an uncrowded pan lets that moisture cook off and the edges brown, instead of the skillet turning watery.
  • Season at the end: Wait to add the salt until after the lemon and basil go in, then taste. Browned chicken and acid both shift how salty the dish reads, so the final taste is the honest one.
  • Make it heartier: For a bigger plate, spoon the skillet over cauliflower rice or serve it alongside roasted cauliflower, which soaks up the savory pan juices nicely.
  • Handle the basil gently: Tear the basil rather than chopping it with a knife. Torn leaves release their aroma without bruising and darkening as quickly, so the finish stays bright green and fragrant.

Nutrition & Mindful Eating

Ground chicken takes on whatever it is cooked with, and here that means garlic, a lot of basil and lemon, with zucchini and green beans keeping the skillet green and summery from start to finish.
  • Chicken, zucchini and green beans cook at different speeds and that is the point. The beans stay snappy, the zucchini goes soft and sweet, and the chicken picks up the garlic and oil that both of them release into the pan.
  • Ground chicken is mild and fine textured, so it takes on the basil and lemon completely, and the protein in it is what gives a light skillet its staying power through the evening.
  • Zucchini turns almost creamy when it hits a hot pan with olive oil, releasing its water first and then browning at the edges, and it brings potassium and gentle fiber along with that softness.
  • The basil goes in off the heat so it stays fragrant and the lemon is squeezed over at the table. Together they are the reason this tastes like a summer dish rather than a plain pan of meat and vegetables.
  • Avocado sliced over the top brings a soft richness that settles into the hot vegetables, and its fat working alongside the protein underneath is what makes a plate of this hold you.
  • As you eat, take in the basil and lemon while they are still sharp in the air, and let the warmth of the bowl and the pace of a fork remind you to stop when you feel comfortably full.

Frequently Asked Questions

Can I use frozen green beans instead of fresh?

Yes. Add them straight from frozen in the same step, but expect them to release a little more water; cook uncovered for an extra minute or two so the skillet does not turn watery, and thaw and pat them dry first if you have time.

My skillet came out watery. What happened?

That usually comes from crowding the pan or cooking the zucchini too gently. Use a wide skillet, keep the heat at medium-high, and cook the zucchini uncovered so its moisture can evaporate rather than pool.

Can I make this ahead for lunches?

Yes. Cook the chicken and vegetables, refrigerate, and add fresh basil, lemon, and freshly diced avocado when you reheat and serve. Holding those finishing pieces back keeps each portion tasting bright rather than dull.

Can I use ground chicken breast instead of a fattier blend?

You can, and it makes the dish milder, but breast-only ground chicken dries out more easily. Watch it closely, pull it from the heat as soon as it is no longer pink, and lean on the olive oil and avocado to keep the dish moist.
