Ingredients

  • 4 boneless chicken thighs, diced
  • 1 medium head cauliflower, riced
  • 1 large avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1 1/2 cups shredded red cabbage
  • juice of 2 limes
  • 1/2 cup chopped fresh cilantro
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 2 tbsp olive oil, divided
  • 1 jalapeño, minced
  • 1/2 tsp salt

Instructions

  1. Prep the produce: If the cauliflower is still a whole head, rice it: cut it into florets, discard the tough core, and pulse the florets in a food processor until they break into rice-sized pieces, or grate them on the large holes of a box grater. Halve the cherry tomatoes, thinly shred the red cabbage, and mince the jalapeño, removing the seeds and ribs first for less heat. Chop the fresh cilantro. Cut the limes in half and juice them into a small bowl. Wait to slice the avocado until just before serving so it stays green.
  2. Season and cook the chicken: Dice the boneless chicken thighs into bite-sized pieces and toss them with the ground cumin, chili powder, and a pinch of the salt until evenly coated. Heat half of the olive oil in a large skillet over medium-high heat until it shimmers.
